The Jennifer Lawrence one is good for that one photo they used, and Zen is right about the makeup helping, but it's not a hair color issue. Otherwise, big structural differences in the face.
Joaquin Phoenix? That's madness. Totally wrong. Ellen? No WAY. Some of these are so off.

Re: Historical Doppelgangers
Zen is right, her facial structure is totally different even though in that one photo they look alike.
Re: Historical Doppelgangers
Disagree. For me, the similarity is there through all of the photos I've seen, even though the differences between them become more obvious the longer you look.

To further address your question about hair styles, however, they can very much impact how someone looks. They can accentuate features of someones face in different ways, framing the face and drawing attention to, or away from, certain aspects of the facial structure, that can change how you the person looks.
For example:

This is part of the reason why hairstyle is such an effective means of disguise. Put on a wig, a pair of glasses (or remove the glasses you normally wear), and you can usually skate past most people trying to find you unless they know you really well.
The other aspect of her facial features that I see that I don't think matches the actress in the picture is basically a difference between where that blonde hair generally comes from and where the actress was from. My wife has jet black hair (well... it is getting a bit less jet lately... but aren't we all...) and half of her family is of Hungarian descent. (Literally all of her father's grandparents were Hungarian immigrants.) What I see in the actress' face is a Southern-European/Mediterranean facial structure, very similar to my wife's. Jennifer Lawrence has a much more Northern European facial structure, and, if you look at her IMDB profile, it says "She has English, German, Irish, Scottish, and remote French ancestry."
So, if you're wondering why her hair color may impact my opinion, I see her as a natural blonde with Northern European features and don't see similarity to an Egyptian actress with Mediterranean facial features that remind me of my wife.
