Breakfast: Every day the same- two eggs on dry toast
Lunch: On Sunday I'd make a batch of something in my slow cooker or Instant Pot and eat it for lunch every day. It would rotate between black eyed peas, succotash, spicy black beans and then some Instant Pot experiment of the week.
Dinner: Two different meals made on Sunday and then alternated during the week. Like: spicy sausage stew and teriyaki beef over rice.
I'm thinking about this because, whenever my family goes away on their camping trips and I'm home alone, this is how I do my meals. And I eat WAY less and stick to the schedule because there's no discretion to it after I've decided on and made the meals. And in May my family is going on a month-long trip up the east coast, so I'm going to end up doing this for a month.
